Ingredients:
500 grams of genuine Feta cheese
100ml Greek virgin olive oil (you may need to add a little more)
1-2 hot red pepper (depending on how brave you are)
½ teaspoon of black pepper corns (added at the end for effect)
Preparation:
Add the olive oil and red peppers (including the seeds) to a food processor and blend thoroughly. Cut the Feta cheese into cubes and add to the mix then blend to a creamy texture. For more mild versions of this snack, do not include the pepper seeds. Serve in a shallow bowl and garnish.
Variation: One version includes black or coloured peppercorns, for the fans of the taste of the pepper.
Some tips:
If you warm up the feta cheese before adding it to the blender, your snack will not harden even if you leave it for days in the fridge. Warming up the feta cheese softens it significantly.
Good quality feta cheese is required for maximum taste. If the cheese is soft, you may use less olive oil.
